Fun and Festive Recipes
With Thanksgiving just around the corner and weekends full of football game gatherings, I thought you might enjoy trying some of the easy recipes. Sure to please the crowd!
Creamy No-Bake Pumpkin Pie
1 1/2 cup milk
6 ounce pkg instant vanilla pudding mix
1 cup canned pumpkin
1 tsp pumpkin pie spice
2 1/2 cup whipped topping, divided
9 inch pie crust, baked
Combine milk, pudding mix, pumpkin, spice, and one cup whipped topping in a large mixing bowl. Beat at low speed for one minute; pour into pie crust. Chill at least 3 hours. Top with remaining whipped topping. Makes 8 servings.

1 1/3 cup shredded Cheddar cheese
1 tsp minced garlic
1 1/2 T chili powder
1 tsp cumin
1 tsp dried oregano
1 tsp paprika
cayenne pepper to taste
3 boneless, skinless chicken breasts, cooked and chopped
1 bunch cilantro, chopped
4 green onions, chopped
10 ounce can diced tomatoes with green chiles
Mix cheeses together until well blended; add garlic, chili powder, cumin, oregano, paprika, and cayenne pepper. Mix well; stir in remaining ingredients. Cover and refrigerate overnight.
Serves 12.

1/2 cup sugar
1 tsp vanilla extract
1 pint strawberries, hulled and sliced
2 quarts brewed tea, cooled **(try one of my SpecialTea Blends of loose leaf tea)
ice cubes
Blend lemonade concentrate, sugar, vanilla, and strawberries together; pour into tea, stirring well. Pour over ice cubes in serving glasses. Serves 10.
